PiTa Bread

 I decided not to split these open and just cut them in half and toast it.

Tomato-less Salad




No recipe, see & do.

Its really been ridiculously HOT! And I've had a salad almost every other day. Usually I almost always add tomatoes to my salads - I've always believed its not a real salad without it, but this time I made a little change and omitted the tomatoes; I realized it can still be a great salad without it. I like experimenting knowing that I'm not limited in how many things I can throw in. This was my weekend dinner- meal salad consisting of: romaine lettuce, chicken cutlets (chopped), corn, chickpeas, carrots, cucumbers, raisins, sesame seeds, sunflower seeds, roasted almonds (chopped) - the seeds & roasted almonds really bump this salad up into greatness!  And to top it off - Parmesan cheese & homemade croutons. I also added some non-dairy mayo (you can use regular) with extra virgin olive oil lightly drizzled on top; do add some freshly ground black pepper (love! Black pepper) and a little sea salt if you'd like, but you don't need much as there's enough in the cheese and mayo - taste as you go.  As you can see, my croutons are very well toasted (I like them that way), I simply took a round kaiser roll that I had saved in the freezer, thawed it out - ripped it into pieces with my hands, added a little olive oil and baked it on 375 for about 15 min. If you prefer it not so toasted use less time.

Curry Macaroni Salmon Salad


 The weather is hot,warm, cold -who knows! This is a quick throw together salad that is a
filling meal without being to heavy on whatever kind of day. The curry was a last minute add-in; it  
for surely kicked up the flavor.

Lasagna Roll-ups 

I've heard of lasagna roll-ups before, but never really gave any thought of making any until I made a lasagna casserole; only then did this idea come to mind.  I had some leftover cooked pasta and said to myself "what am I going to do with the rest of this".  Of course I didn't want to waste it, so this came to mind- 
roll-ups! 
It came out so good..

Fish & Salad



This is my see and do weekend meal made simple; make your favorite salad and choice of fish.  What you see above is: green lettuce, cucumbers, tomatoes and carrots with a dressing made with balsamic vinegar, dijon mustard and olive oil - salt & pepper to taste. The fish is Tilapia seasoned and dusted with a little white whole wheat flour. I cooked it lightly in a pan using very little sunflower seed oil.

Making Almond Milk

Making almond milk is so easy I can teach it to my 5 year old grandson.  I use to buy it all the time - now I make it.  The taste is so much better because you're making it fresh, and you can make as much or little as needed.

Simple Spinach & Tomato Salad
w/goat cheese and olive oil


Simple is good.


A simple salad is good sometimes.  This one is pretty easy; just spinach, tomatoes, and goat cheese - add in a little balsamic vinegar, really good olive oil, salt and pepper.  You can get some really good homemade dressings from the internet too.  Make your own!  Don't buy it from the store.
