I can make this pudding in just a few minutes - no real effort at all! Its totally vegan.
* 1) 12oz package of Silken tofu
* 1/3 - 1/2 cup pure maple syrup
* 1/3 cup dark cocoa or carob powder
* 1-2 tsp pure vanilla extract
* pinch of salt
1 - 2 Tbsp cashew or almond butter
1/4 cup chopped pecans or walnuts to be sprinkled on top
2 tsp ground cinnamon
1 tsp ground cardamom
1 tsp mint extract
Place all ingredients in a blender or food processor and blend several minutes until smooth and creamy.
Pour into individual serving bowls.
Serve immediately or chill in fridge until serving time.
