OATS two ways:



Muesli I soaked this muesli in almond milk instead of dairy; next I'll try coconut milk - I bet that's really going to be good!


Creamy Banana Oatmeal  The bananas & milk help make this bowl of oatmeal smooth & creamy.  There was a time when I only made oatmeal with water alone; well, I decided to give this way a try, and now it's my favorite way to cook my oatmeal - I do  half water/milk.  






 Muesli

* 3/4 cup of rolled oats
* 1 & 1/3 cups Almond milk
* chopped almonds, walnuts or pecans (whatever nuts you'd like)
* Dried cherries or Raisins
* Tiny pinch of salt
* Maple syrup for drizzling
* Fruit (opt.)

In a bowl, toss together the oats, almonds, raisins and salt. Pour 1 cup plus 1/3 cup more of almond milk (use any kind you like) over the mix (you can add more later if you like) cover with aluminum foil or plastic wrap for 1 hour or overnight. When your ready to eat/serve add fruit: bananas, strawberries or blueberries and drizzle with maple syrup.

Creamy banana oatmeal:

* 3/4 cup of rolled oats
* 3/4 - 1 cup of water
* 3/4 - 1 cup of milk (I used 1%)
* Peanut Butter (opt.)
* 1 med size banana
* Raisins and or dried cherries (whatever kind of fruit you'd like)
* Chia seeds (opt.)
* Walnuts ( nuts of any kind)
* Coconut Flakes (opt.)
* Maple syrup (for drizzling)
* Extra milk (when ready to eat/serve) opt.

Use a med size sauce pan add milk, water, banana and oats let it start to cook a little (on med heat), then add the raisins, cherries or whatever kind of dried fruit you like, turn down the heat low to simmer.  Keep stirring so that it doesn't stick and everything is nice and creamy like (for about 5min).  Pour into a bowl add a teaspoon or tablespoon of peanut butter-depending on how much you'd like (just dollop or smear it in).  Add walnuts, coconut flakes and sprinkle about 1tsp of chia seeds on top.  Drizzle a little maple syrup to sweeten it, or you can sprinkle a little brown sugar (unrefined).  Some good sweeteners: moscovado, sugar in the raw, agave nectar, or brown rice syrup.  You won't need much as the bananas (depending on how ripe it is), and raisins will help to give it some good sweetness.



Servings: (1) You can just double-up for more than one person.

Note: A little browned butter is also nice (just a little!) drizzled over the top.  take about a tsp of butter let it get browned in a pan and just drizzle it over the oatmeal.  I don't always do this, but every now and then is nice.
