All natural ginger pink lemonade
no food colors!

This is a refreshing lemonade drink with a nice little bite from the ginger.  The beet gives a nice pinkish color without adding any artificial food coloring.  I know people will probably think, beets!  But it actually gives a mild/interesting flavor.  You won't notice it too much (only in a good way).

Ingredients:

  • 7 cups of water
  • Fresh ginger root
  • 1 small beet (for color)
  • about 1 1/2 lemon
  • 1 lime
  • 1/4 - 1/3 cup of sugar (I use sugar in the raw)

Get a pitcher maybe 32oz. cut up about (about 6-8) med slices of ginger (hit it with a good pound with your knife to release the flavors in the ginger) also, slice a few slivers from one small beet - just a few should do the trick to give it some color (don't worry about the taste it won't be strong).  Squeeze in the juice of the lemon &lime then throw it in whole.  Heat up about 1cup of water add it to melt the sugar and to get the ginger and beets activated.  Stir it up well until you see that all the sugar has melted then add the rest of the water.  Stir again.  If it needs more sugar- add more. You can then drink/serve it over ice or chill it in the refrig.

Note: I think this drink gets better the longer it sits, but if you think that after sitting for a long period of time its too strong, let it sit a few hours then you can take out some of the ginger, beets and the lemon/lime.
