Simple Spinach & Tomato Salad
w/goat cheese and olive oil


Simple is good.


A simple salad is good sometimes.  This one is pretty easy; just spinach, tomatoes, and goat cheese - add in a little balsamic vinegar, really good olive oil, salt and pepper.  You can get some really good homemade dressings from the internet too.  Make your own!  Don't buy it from the store.


 Really! ROASTED potatoes




This is just the way I love my potatoes roasted - very well done - as I do with all my veggies.


I like to eat it with a few dollops of Greek yogurt, or sprinkle it with a little parmigiana, or good aged cheddar cheese (sparingly of course!)


BRUNCH - Fried egg w/ tomato, avocado & non-dairy mayo


This one egg/egg white (I usually do one to one) was lightly fried with a little olive oil (on low heat) placed on a whole wheat sandwich roll, smeared with non - dairy mayonnaise -veganise is as close to Hellmans as you can get - soooo good!  Topped with a slice of tomato, avocado chunks and drizzled with some good quality olive oil. 




NuTs, SeeDs & Dried FruiTs


I get all my nuts, seeds, and dried fruit from Sahad's in Brooklyn. I also buy; dried spices, seasonings and specialty foods like: different kinds of flours & oils.  Sahad's is so popular that people come in droves - including top chefs.  It can get pretty crowded in there  especially on Saturdays, and during the week - the after work crowd. And if you don't grab yourself a ticket as soon as you walk in, you're going to be waiting a very long time.  I'm so glad they're right here in Brooklyn (where I live).  They also have all kinds of coffee, cheese and a fresh olive bar all under one roof. (everyone there knows who I am).  Lol  







BREAKFAST Crostini
w/ peanut butter, banana & coconut 


There's really nothing to this yummy simplistic breakfast/snack - just look and do. 
Simply toast your bread(use whatever kind of crusty bread/baguette), smear a little nut butter (it doesn't have to be peanut butter), and top with banana slices, crumble coconut butter and drizzle some honey or maple syrup.  That's it!

What I love about crepes they can be savory or sweet.


You can fill crepes with anything you'd like.  I filled this one with bananas.  Ali, had nutella in his.

These muffins are not just for breakfast; they can be eaten anytime.

I called these my cakes in a pan because I simply could not get the damn things out of the pan!








All natural ginger pink lemonade
no food colors!




This is a refreshing lemonade drink with a nice little bite from the ginger.  The beet gives a nice pinkish color without adding any artificial food coloring.  I know people will probably think, beets!  But it actually gives a mild/interesting flavor.  You won't notice it too much (only in a good way).

OATS two ways:



Muesli I soaked this muesli in almond milk instead of dairy; next I'll try coconut milk - I bet that's really going to be good!


Creamy Banana Oatmeal  The bananas & milk help make this bowl of oatmeal smooth & creamy.  There was a time when I only made oatmeal with water alone; well, I decided to give this way a try, and now it's my favorite way to cook my oatmeal - I do  half water/milk.
